The restaurant manager is the position in charge of all Eataly FOH activities. FOH includes: thematic restaurants (Pasta e Pizza, Trattoria), the Piazza, the Gran Bar with the pastry and the Nutella corner.

The restaurant manager is responsible for:

·  Implementing meticulous cost controls to achieve food, beverage and labour cost target through vendor negotiation, training, waste control and forecasting tools
·  Overseeing and manage all administrative duties including forecasting, scheduling, coaching and counselling of employees and management

The position reports directly to the store GM.

Job Functions

The position will be responsible both for the restaurants and cafeteria setup and standardizing day-to-day operations managing all the FOH activities.

The position will be directly responsible for all the restaurant activities:

·  Menu development and preparation with the chef executive included price analysis and local benchmark
·  Restaurant setup
·  Beverage orders and transfers
·  Working together with the HR Office for the Selection of Restaurant staff
·  Development and executing sequence of service
·  Developing training programs for all the staff

The positions will be directly responsible for all the ordinary and extraordinary restaurant operations included:

·  Managing monthly P&L developing sales analysis, sales forecasting and daily tracking of goals
·  Preparing weekly snapshot reports for sales, promotions and labour costs

Qualifications

·  Restaurant experience, at least 2/4 years in a similar position in fine dining, fast food restaurant or hotel F&B
·  Strong knowledge to manage big groups of people in a complex structure
·  Able to interact with top management and operational staff; being both leader and team player
·  Independent and have good human and analytical/numerical attitude
·  Able to work under stress and manage responsibilities
·  Excellent knowledge of TCPOS and Excel
·  Deep knowledge of the German restaurant market: people management and scheduling, HACCP rules, IT restaurant systems, legislation
·  Good knowledge of Italian food and wine culture
·  German (mother tongue), English (business fluent). Italian language is preferential
